Sushi Takayoshi.

Opened in May 2022. Seasonal fish and carefully chosen sake, served quietly in Hon-Atsugi.

It began with
a single sentence.

“Serve the refined sushi that Atsugi did not have.” That one line was the only thing we decided before opening, and everything since — sourcing, the pieces themselves, the plates, the room — has been chosen by whether it fits that line.

A sushi restaurant is not a business of serving the same fish the same way. The lead fish changes with the season, and even the same fish is handled differently from one day to the next. The chef decides how to cut it, how long to let it rest and when to shape it.

So what reaches you differs day by day. The only constant is that the work is adjusted to the person sitting in front of us.

A quiet room,
and the food in front of you.

The counter is pale, untreated wood. The knife works in front of you and each piece is set down as it is finished. Talk if you like, or eat in silence — both are welcome here.

At the back there is a private room, for business dinners or anniversaries when you would rather not be seen. Tell us when you book and we will hold it for you.

What comes next

To become the restaurant Atsugi chooses, and to raise people who can do this work as well as we do. Those are the two things we are working on now.
