Drinking with the food

Quiet sake for delicate fish

With thinly sliced white fish or shellfish we pour a clean junmai ginjo with a short finish, so the sweetness of the fish stays last.

Fuller sake for richer cuts

For chutoro or seared pieces, a junmai with more body cuts through the fat and makes you look forward to the next piece.

When in doubt, ask the chef

We will choose a glass for the pieces you are eating. Just tell us how you like it — light, chilled, and so on.
